Apple and Clove Loaf Cake

Good morning! Here in San Mateo it´s raining again this morning and so I´m typing you this post while looking out the window.. 

¡Buenos días! Aquí en San Mateo está lloviendo otra vez esta mañana y estoy tecleando este post mientras miro fuera a través de la ventana..




Awhile ago I saw a video of Laura Vitale (I just love the simplicity of her baking, she makes everything look so easy!) on how to make an apple upside down cake, so I decided to make a loaf cake with her recipe (tweaking it to my liking along the way). 


Hace tiempo vi un vídeo de Laura Vitale (me encanta la manera que ella hornea, todo parece muy sencillo) de como hacer una tarta "al revés" de manzana, por lo tanto decidí hacer una tarta en forma de barra usando su receta (adaptada según mis gustos).



I made 2 loaf cakes, one with normal flour and the other with gluten free flour, they both came out equally delicious.. I now have the confidence to experiment with gluten free baking as I have a serious suspision that I might be gluten intollerant.. (after doing some research of my own..).

Hice 2 loaf cakes, una con harina normal y la otra con harina sin gluten, ambas quedaron igualmente deliciosas.. ahora tengo más confianza en experimentar con productos sin gluten y más cuando tengo la sospecha que quizás yo tenga intolerancia al gluten.. (después de alguna investigación hecha por mi misma..).


When I baked this loaf cake, my house smelled amazing..  Just imagine the smells of apples and caramelized sugar baking in the oven and what´s more.. the rich smell of cloves.. I was in kitchen heaven!

Cuando horneé este loaf cake, mi casa olió de forma fantástica..  Imagina los olores de manzanas y azúcar caramelizada dentro del horno ya demás el olor a clavos.. ¡Estaba en la cocina del paraíso!




So let´s get started on the RECIPE..

For the caramelized apples:

Ingredients:

2 apples (peeled, cored and cut into wedges)
1 cup of brown sugar
1/4 cup of butter without salt
5ml vanilla essence

Method:

Heat up all the ingredients except for the apples in a pan on a medium to high heat, when the butter has melted and the mixture starts to bubble, take it off the heat and pour it into a loaf tin (pre-lined with wax paper).  Now stack the apples neatly and tightly next to each other making sure the whole tin is covered.


For the loaf cake:

Ingredients:

1 1/3 cup of All Purpose flour/Gluten free flour1 tsp of grounded Cinnamon
1/2 tsp of grounded Ginger
1/2 tsp of grounded Clove
1 tsp of Baking Powder
pinch of Salt
zest of 1 large Orange
½ cup Olive Oil
2 large Eggs
1 tsp of Vanilla Extract
½ cup of Buttermilk
1 cup of Brown Sugar


Method:
Preheat your oven to 170ºC.  In a small bowl mix together the flour, salt, baking powder and spices.  In a large bowl cream together the olive oil and brown sugar, add eggs, vanilla and orange zest and mix until creamy.  Add half of the dry ingredients and half of the buttermilk and mix to combine, add the remaining dry ingredients and buttermilk and just mix until everything is well incorporated and pour this batter over the apples making sure to spread it evenly.  Bake for 55 - 60 minutes and let it cool for 15 minutes.  Serve directly from the loaf tin or place on a plate upside down on the pan and turn the plate and pan over to invert the cake right side (or bottom side) up on the plate.. if you want you can dust it with icing sugar.. Enjoy!

This loaf cake was easy to make and the result was amazing!  The best time to eat it is when 
it´s still warm (about 15min or so after you´ve taken it out of the oven).  

Este loaf cake fue fácil de hacer y el resultado estaba riquísimo! El mejor momento para comerlo es cuando está aún caliente (aproximadamente 15 minutos o un poquito más después de salir del horno).



You guys know I´m now obsessed with cooking with ginger (what can I say..) and the Autumn vibe has hit me full force!  So the next recipe will include ginger but this time with a completely different combination.. I´m gingerly excited to share it with you all..lol!

Ustedes saben que ahora estoy obsesionada en cocinar con jengibre (¿qué puedo decir ..?) y el ambiente de otoño me ha golpeado con toda su fuerza! Así que la siguiente receta incluirá jengibre pero este vez con una combinación completamente diferente.. ¡Estoy jengibremente emocionada en compartir con todos ustedes..jaja!

  8. What a perfect autumn dessert! I just made applesauce and the house smelled amazing--I can imagine how much better it is when you combine those apples with cloves, butter, and sugar!
