Method:
Preheat your oven to 170ºC. In a small bowl mix together the flour, salt, baking powder and spices. In a large bowl cream together the olive oil and brown sugar, add eggs, vanilla and orange zest and mix until creamy. Add half of the dry ingredients and half of the buttermilk and mix to combine, add the remaining dry ingredients and buttermilk and just mix until everything is well incorporated and pour this batter over the apples making sure to spread it evenly. Bake for 55 - 60 minutes and let it cool for 15 minutes. Serve directly from the loaf tin or place on a plate upside down on the pan and turn the plate and pan over to invert the cake right side (or bottom side) up on the plate.. if you want you can dust it with icing sugar..
