Chocolate Chilli and Ginger Cake

Yesterday was my hubby´s birthday and because I have 600 likes on my Facebook page, I decided to do this mini post with the recipe of the cake I made for his birthday!  I apologize in advance for the quality of the photos, I didn´t have time to do any food styling.. sorry.. but believe me the cake tasted really nice ;-)

Ayer fue el cumple de mi marido y porque tengo 600 ´me gustas´ en mi página Facebook, he decidido hacer este mini post con la receta de la tarta que hice para su cumple!  Me disculpo por anticipado por la calidad de las fotos, no tuve tiempo para preparar el escenario.. lo siento.. pero créanme que la tarta estaba muy rica ;-)





I made him his favourite.. chocolate.. I just made a mini version because in his family they have a tradition, his Dad makes the same cake for everyones birthday, it´s called the Henriquez family cake.. it´s basically anniseed flavoured biscuits stacked with a cocoa cream.. it´s really nice.. and who am I to break tradition ;-)  Here´s my hubby taking a bite of his cake ;-)

Hice su favorito.. chocolate.. solo hice un verción mini porque en su familia tienen una tradicion, su padre hace la misma tarta para los cumpleaños para todos, se llama tarta de familia Henriquz.. es basicamente galletas cde anís con crema de cacao.. está muy bien.. y quien soy yo para romper una tradición ;-)  Aquí está mi marido comiendo un trozo ;-)



To get back to the cake on hand, I decided to follow the advise of a friend (thanks Carmela!) and made a Chocolate, Chilli & Ginger flavoured cake.. I was worried that the chilli & ginger would be too strong but it wasn´t, it just gave a ´kick´but the sweetness of the chocolate broke through and the result was perfect!

Volviendo al tema de la tarta, decidí seguir el consejo de una amiga (gracias Carmela!) he hice una tarta de chocolate, chilli y jengibre.  Estaba preocupada que los sabores de chilli y jengibre fueran muy fuertes pero no fue así, simplemente le dió un toque pero la dulzura del chocolate hizo un resultado perfecto!

RECIPE:

For the chocolate cake (makes 2 x 24cm cakes):

Ingredients:
120g. cacoa (without sugar)
210g. all purpose flour
250g. sugar
1 & 1/2 tspn b.soda
3/4 tspn baking powder
pinch of salt
2 large eggs
250ml buttermilk (make your own: 250ml milk + 1 tablespoon lemon juice, leave to stand for 10 min)
180ml lukewarm water
3 tablespoons oil (I used olive oil)
1 teaspoon vanilla essence


Method:
Sift all the dry ingredients together. Beat your eggs, oil and sugar together, add the dry ingredients and then the liquids, mix all together (make sure not to overmix).  Bake for 30-35min in a pre-heated oven at 175ºC.

For the Ganache filling:

Ingredients:
400ml cream
400g (4 x 100g bars) Lindt chocolate with chilli (chopped in small pieces)
1 teaspoon grounded ginger
1/2 cup sifted icing sugar

Method:
Heat the cream in the microwave for about 1 - 1 1/2 min, just before it starts to boil, add your chopped chocolate, ginger & icing sugar.  Make sure you mix well and leave to cool/set in the fridge.

For the frosting (I used this to cover the cake):

Ingredients:
2 x 250g butter without salt
2 cups sifted icing sugar
1 cup cocoa without sugar
the remaining of the ganache

Method:
Mix well together until soft and creamy, leave to cool in the fridge for easy spreading.

To assemble your cake:
Once your cake has been cooled, fill it with the ganache filling and leave to set.  Now cover the cake with a thin layer of the ganache and leave in the fridge to set for about 20min (when it´s very hot I leave mine in the freezer).  Now it´s time to frost the cake with the buttercream.  I decorated mine with chocolate chilli tuffles that I made by melting some Lindt chilli chocolate and filling chocolate moulds and then left them to set in the fridge.


Here´s my son Luca posing for the camera, he always wants us to take photos of him..haha.. and whenever one of us celebrate our birthday, he says it´s his too :-)  I want to eat him up sometimes!  I hope you guys like this recipe!!  I already have a few ideas for my next post, now just need to decide which one to do 1st..
