Pumpkin Layer Cake

Me encanta publicar los viernes, creo que debería hacerlo cada semana .. Me siento con mucha más energía .. :-)

.. y me encanta el otoño! Los diferentes colores de las hojas, la promesa de invierno .. el olor de la canela .. He tenido esta conversación con tanta gente, especialmente desde que vivo aquí, en Gran Canaria, ¿cómo que te gusta el frío? .. y la respuesta es siempre la misma, me gustan todas las estaciones del año .. Me encanta el cambio de las estaciones y saber que es lo que cada uno de ellas nos trae ..

I love posting on Fridays, I think I should do it every week.. I just feel so much more energized.. :-)

..and I love Autumn!  The rich different colours of the leaves, the promise of winter.. the smell of cinnamon..  I have had this debate with so many people, especially since living here in Gran Canaria, how can you like the cold.. and the answer is always the same, I like all the seasons.. I love the change of the seasons and the promise that each one of them bring.. 





Es por eso que me gustó mucho hacer esta tarta .. contiene tantas cosas que me encanta de este momento tan especial: una tarta con capas de CALABAZA hecho con buttermilk y azúcar moreno, empapada con una rica canela y sirope de vainilla y por último rematado con un frosting de canela y azúcar moreno! Sé que estoy diciendo mucho, pero créanme cuando digo que vale la pena ;-)

That´s why I really liked making this cake.. it contains so many things I love of this special time: a PUMPKIN layered cake made with buttermilk & brown sugar, soaked with a rich cinnamon & vanilla syrup and lastly topped with a cinnamon & brown sugar frosting!!  I know its a mouthful to say but believe me when I say it´s worthit ;-)



Esta tarta me tomó un tiempo para hacer, porque hay varios pasos, pero no fue difícil .. el hecho de que horneé la calabaza al principio, le dio un rico sabor extra a la tarta.

This cake took awhile to make because of all the steps but it wasn´t difficult.. the fact that I grilled the pumpkin in the oven before the time, gave an extra rich full flavour to the cake.  



He hecho glaseado de azúcar moreno antes, pero no me gustaba mucho el resultado tanto como pensaba que lo haría, por eso esta vez decidí seguir mis propias ideas (de vez en cuando estas neuronas que tengo necesitan un poco de ejercicio ..) y con mi forma de pensar .. el resultado (en mi opinión ..) fue mucho mejor!

I have made brown sugar frosting before, but I didn´t really like the result as much as I thought I would, this time I decided to follow my own head (now and then these brain cells of mine need some practice..) and make it the way I think.. the result (in my opinion..) was so much better!



La Receta

Para la tarta:

Ingredientes:
4 huevos
4 tazas de harina
5ml de bicarbonato de sodio
5ml de levadura
un poco de sal
2 tazas de azúcar moreno
1 taza de calabaza horneada y escurrida (para evitar el exceso de agua)
7,5ml de canela
265ml de buttermilk (puedes hacerlo añadiendo 15 ml de zumo de limón a 250 ml de leche)
media taza de aceita (usé aceite de girasol)

Método
Mezcla la mantequilla y el azúcar hasta que esté cremoso, añadir los huevos uno a uno. Tamizar los ingredientes secos y se añade lentamente a la mezcla hasta que estén bien incorporados. Agregue la calabaza, ahora añada la esencia de vainilla al suero de leche (buttermilk) y se añade lentamente el líquido a la mezcla. Simplemente mezcle hasta que se incorpore (no mezclar en exceso). Poner en 2 moldes bien engrasados ​​de 20-24cm de tamaño y hornear durante 30 35 minutos a 175 º C.

The Recipe:

For the cake:

Ingredients:
4 eggs
4 cups of flour
5ml of sodium bicarbonate
5ml of baking powder
pinch of salt
2 cups of brown sugar
1 cup of grilled pumpkin after it has been drained (to get rid of the excess water)
7.5ml cinnamon
10ml vanilla essence
265ml buttermilk (you can make your own by adding 15ml of lemon juice to 250ml of milk)
1/2 cup oil (I used sunflower oil)

Method:
Cream your butter & sugar together until creamy, add the eggs one by one.  Sift all the dry ingredients together and slowly add to the mixture until well incorporated. Add the pumpkin, now add the vanilla essence to the buttermilk and slowly add the liquid to the mixture.  Just mix until incorporated (don´t overmix).  Put in 2 well greased moulds of 20-24cm in size and bake for 30-35min at 175ºC.



Para el sirope:

Ingredientes:
300ml agua
300ml azúcar
10ml de esencia de vainilla
15ml de canela

Método
Calentar todos los ingredientes (excepto la canela) en a fuego medio-bajo, cuando se derrita el azúcar, añadir la canela y retirar del fuego. Cuando el pastel salga del horno, haga agujeros con el tenedor o con un palillo de dientes y vierta la mitad del sirope en dos tortas (la otra mitad es para el glaseado).

For the syrup:

Ingredients:
300ml water
300ml sugar
10ml vanilla essence
15ml cinnamon

Method:
Heat all the ingredients (except for the cinnamon) on a low to medium heat, when the sugar is melted, add the cinnamon and remove from the heat.  When the cake comes out of the oven, make wholes with a fork or toothpick and pour half of the syrup onto both cakes (the other half is for the frosting).



Para el frosting:

Ingredientes:
250 g de mantequilla sin sal (a temperatura ambiente)
la otra mitad del sirope (a temperatura ambiente)
azúcar glass (si prefiere que esté más dulce, yo añadí media taza a mi tarta)

Método

Batir la mantequilla hasta que esté cremosa, agregue lentamente el sirope de azúcar moreno hasta que el almíbar esté bien incorporado. Compruebe si necesita agregar azúcar glas, si es así, añadir poco a poco y una vez que todo el azúcar glas se incorpora vaya aumentando su velocidad hasta alta durante aprox. 5 min.

He decorado mi tartas con calabazas y hojas que hice con fondant, y finalmente rematado con virutas de chocolate negro .. DELICIOSO!


For the frosting:

Ingredients:
250g unsalted butter (at room temperature)
the other half of the syrup (at room temperature)
well sifted icing sugar (if you prefer your frosting to be sweeter, I added 1/2 cup to mine)

Method:
Beat your butter until creamy, slowly add your brown sugar syrup until the syrup is well incorporated. Check if you need to add icing sugar, if so, add it slowly and once all the icing sugar is incorporated increase your speed until high for aprox. 5 min.

I decorated my cakes with ini pumpkins and leaves that I made with fondant, and finally I topped it off with dark chocolate shavings.. YUM!!

Tengo muchas ganas de pasar tiempo con mi marido y los niños, quedar con buenos amigos el domingo .. hacer algo de ejercicio en el gimnasio (bueno, no estoy tan entusiasmada con esto .. pero es necesario .. jeje ..).
