Ginger and Orange Cake Pops

I haven´t written anything for a few days because we had a long weekend here in Spain and I wanted to enjoy the time with my family   I absolutely love ginger and I´ve learnt that
it´s possible to combine it with many ingredients! In today´s recipe I combined it with orange..

You could easily use this recipe for a layer cake or cupcakes.. the ginger cake taste and smells like ginger cookies.. whenever you combine butter and brown sugar you imitate the flavour of baked cookies.. so this time my kitchen smelled like I was baking ginger cookies!  The flavour is amazing and once you combine it with the zestiness of the orange you will love this!

Confession time.. When I started blogging, I wanted to be as good as the other bloggers out there.. it was hard work to keep up with everyone else.. but I have matured in the world of blogging and now I dont try to make and do what everyone else does but I try to improve my own skills and I bake with my gut instinct.. the amazing thing is that I´m enjoying it so much more and what I´m producing is what I like and what I believe is good.. I´ve been liberated :-)

Me siento liberada :-)

So for the RECIPE..
Receta en Español

Ginger Cake:
1 & 1/2 cups of flour
1 & 1/4 tspn baking powder
1/2 tspn baking soda
pinch of salt
1 cup of brown sugar
1 & 1/2 tspn grounded ginger
1 & 1/2 tspn vanilla essence
zest of 1 orange
125ml buttermilk
125ml butter (without salt) at room temperature

Method:
Sift all the dry ingredients together, while beating the sugar and butter together on high speed, then add the orange zest and vanilla.  Now add the dry ingredients and buttermilk to the mixture and beat just until all the ingredients are incorporated.  Bake in a pre-heated oven at 175ºC at 35-40min in a pre-prepared/lined cake tin.  When the cake is baked, leave to cool completely and crumb to make your cake balls.

Orange Icing:
1 & 1/2 cup icing sugar
zest of 1 orange
juice of 2 oranges
1 tspn vanilla essence

Method:
Heat up in a pot until the icing sugar dissolves.. when cool add to the cooled cake crumbs and form balls. Leave to set in the freezer for 15 minutes.  Melt your white chocolate in a microwave at 15 second intervals until completely melted (I always add a few drops of oil as this helps when dipping the cake balls/pops into the melted chocolate).  Now dip your cake pop sticks into the melted chocolate & press the sticks into the cake balls.  Leave in the freezer again to set for about 10 minutes.  Now dip the cake pops into the melted chocolate and leave to set. Decorate to your liking ;-)

Now since I´ve been experiencing with new flavour combinations and I´ve been in the mood to confess, I have another confession to make.. the next post consists of 3 ingredients that

I´ve never combined together and after tasting the result, I´m totally in love with it.. ok ok I know I say that about everything but this time it´s double true..lol!

Have a great week y´all!!
