Choc Chip Banana Cupcakes

Monkey say, monkey do (say what?!?).. Dont worry I´m not going crazy this is how I act when I´m happy and I´m very happy cause it´s weekeeeeeeeeeend... whoohoooo (doing my happy dance, well sort of cause I´m sitting down typing this--lol). Well you´ll see later why I´m mentioning monkeys because this post has alot to do with monkeys, cute little fondant monkeys for a special little 1 year old called Marta who happens to be my husband´s 
relative ;-)

Lo que dice el mono, el mono lo hace (decir el qué?!?) .. No se preocupen que no estoy loca, ésta es la forma en que actúo cuando estoy feliz y estoy muy contenta porque es fin de semanaaaaaa ... yujuuu (haciendo mi baile de la alegría, bueno casi porque estoy sentada escribiendo esto - jeje). Pues verán más adelante porqué estoy mencionando monos porque este post tiene mucho que ver con los monos, pequeños monos lindos de fondant para una pequeña niña muy especial de 1 año llamada Marta que resulta ser familiar de mi marido;-)



These cupcakes consist of banana cake filled with choc chips and covered with a creamy rich chocolate ganache..

Estos cupcakes son de plátano llenos de chips de chocolate y cubiertos con un rico ganache de chocolate cremoso ..



I´ve combined the two flavours previously by making a chocolate cake and banana frosting (which by the way is equally delicious..) but this time I wanted to try something different ;-)

He combinado los dos sabores comentados anteriormente haciéndolos de chocolate y con frosting de plátano (que por cierto, es igualmente delicioso ..) pero esta vez quería probar algo diferente;-)



But the best part was making these monkey toppers.. perfect for a cute little Monkey celebrating her very special 1st birthday! All together  now... (aaaaahhhhhh...)!!

Pero lo mejor fue hacer estos primeros monos .. perfecto para una pequeña monada linda que celebra su 1er cumpleaños muy especial! Todos juntos ahora ... (aaaaahhhhhh. ..)!



Ok so let´s get down to business, how were these made??

RECIPE:

For the banana choc chip cake:

Ingredients:
(makes 12-15 cupcakes)

1 & 1/4 cup flour
1 cup white sugar
2 ripe bananas
2 eggs
1 1/4 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 1/2 tsp vanilla essence
1/2 cup oil
1 cup chocolate chips
30ml (2 tablespoons) milk

Method:
Sift all the dry ingredients together, mix the oil and sugar together well and add the eggs one by one. Add the vanilla and slowly add the dry ingredient mixture, lastly add the milk and just mix until all the ingredients are well incorporated.  Bake in a 175ºC pre-heated oven for 20 minutes. Leave to cool in your baking tray for 5 minutes then transfer to a cooling rack and cool completely before you frost.

For the chocolate ganache frosting:

Ingredients:
200ml full cream
300g dark chocolate (chopped into small pieces)
1 tsp vanilla essence
1/2 cup sifted icing sugar

Method:
Heat the cream on the stove until just before it boils, now remove from the heat and add the chopped chocolate, let stand for 1 minute, now mix well with a wire whisk until all the chocolate is melted.  Add the vanilla essence and icing sugar and whisk fast until all the icing sugar is well mixed.  Frost with your fave nozzle and enjoy!!



So let the weekend begin, I´m off to run on the treadmill (yeah I know it´s crazy but if you bake as much as I do.. and TASTE as much as I do.. you´ll understand..), get ready and off to the city to meet with some friends.. Life is good and I feel blessed to share it with the people I love :-)
