Good morning, I dont know about the other bloggers but some days I sit down in front of my laptop ready to write a new post full of things to say and other days like today I´m grasping for words.. why does that happen I ask you?? I dont know why.. that´s why I´m asking you... (smile). So if this post sounds boring by any means, please do not close the screen (I beg you) but rather skip my rambling and go straight to the recipe :-) Deal..?
Buenos días, no sé acerca de los otros bloggers, pero algunos días me siento frente a mi portátil lista para escribir una nueva entrada llena de cosas que decir y otros días como hoy siento que me faltan las palabras .. ¿por qué sucede esto? No sé porqué .. es por eso que les pregunto ... (sonrisa). Así que si este post suena aburrido, por cualquier motivo, por favor no cierre la ventana (se lo ruego), así que mejor no divagar más e ir directamente a la receta :-) ¿Trato ..?
Todays recipe is something I´ve wanted to make for awhile now.. flavours I´ve never combined before.. rosemary and lemon and just for fun (what the heck) I added some honey :-) The flavour combination works perfectly and I already have a few more ideas on how to use it again.. that´s me always thinking of how I can combine flavours, that´s why I like blogging, what gets my creative juices flowing.. :-)
La receta de hoy es algo que he querido hacer desde hace un tiempo .. sabores que nunca he combinado antes .. romero y limón y sólo por diversión (¿por qué no?) he añadido un poco de miel :-) La combinación de sabores funciona perfectamente y ya tengo algunas ideas más sobre como utilizar esta combinación de sabores .. esa soy yo, siempre pensando en como puedo combinar sabores, es por eso que me gustan los blogs, que consigue que mi creatividad

You can easily skip the glaze of this cake, believe me it taste just as good without. I found this recipe for a Bundt Cake on the web and added the amount of fresh rosemary to it that I thought would ensure that the flavour of the rosemary comes through but does not overpower the lemon (and vice versa). Since I know honey and lemon go really well together, I added another element by adding a glaze to the Bundt which included honey and lemon..
Puede saltar fácilmente el glaseado de este pastel, créanme que también sabe muy bien sin él. He encontrado esta receta de un pastel Bundt en la web, y añadí una cantidad de romero fresco por que pensé asegurarme de que el sabor del romero penetre pero que no domine al limón (y viceversa). Como sé que la miel y el limón van realmente bien he añadido otro elemento mediante la adición de un glaseado al Bundt que incluye miel y limón ..
When I started making the recipe I thought it was too complicated, too many elements but once you taste the result you´ll know the effort was worthit (more than worthit!!). I´ve never baked a cake where I needed to use oil, butter and cream in one recipe, but this one required it.. so it might not be good for your waistline (I told you the last time that´s why I jump on the treadmill as often as I can..) but the taste will overwhelm you!! It´s really GOOD!!
Cuando empecé a hacer la receta, pensé que era demasiada complicada, con demasiados elementos, pero una vez pruebes el resultado sabrás que el esfuerzo valió la pena (y vaya que si vale la pena!). Nunca he hecho un Bundt Cake donde tuviese que utilizar aceite, mantequilla y la nata en una receta, pero éste lo requería .. por lo que podría no ser bueno para su cintura (Les dije la última vez que es por eso que tengo que usar la cinta de correr tan a menudo como puedo ..) el sabor te abrumará! Está muy rico!

- For the Cake..
- Ingredients:
- 2 3/4 cups (345g) flour
- 1 teaspoon baking powder
- 1 teaspoon kosher or sea salt
- 1 1/4 cups (285g) unsalted butter
- 3 cups (600g) sugar
- 1/3 cup (80ml) canola oil
- zest from 4 large lemons
- 1 tablespoon chopped fresh rosemary
- 1/4 cup (60ml) fresh lemon juice
- 1 tablespoon vanilla extract
- 6 eggs
- 1/2 cup (120ml) heavy cream
- Method:
- Preheat the oven to 350°F. Grease a 12-cup bundt pan.
- In a bowl, whisk together the flour, baking powder, and salt for at least 20 seconds. Set aside.
- In a mixer on medium speed, cream together the butter and sugar until light and fluffy, about 3 minutes (if the bowl does not feel cool while creaming, place it in the freezer for 5 minutes, then continue creaming).
- Beat in the oil, lemon zest, lemon juice, and vanilla extract. On the lowest speed, beat in the eggs, one at a time, until just incorporated.
- Mix in the flour mixture in three stages, until just combined.
- Whip the cream just past the soft peak stage. Stir in about 1/4 of the whipped cream into the batter, and then fold in the remaining whipped cream followed by the rosemary. Pour the batter into the prepared bundt pan. Drop the pan from about 4" (10cm) above the counter to knock out any bubbles.
- Bake on the middle oven rack for 50-60 minutes (about 20 minutes for small pans/moulds), or until a toothpick comes out clean near the center. Allow to cool for 10 minutes, then loosen the cake by knocking it against the counter. Invert the cake onto a serving platter.
- For the Glaze..
- Ingredients:
- 1 cup icing sugar
- 1 tablespoon honey
- juice and rind of 1 lemon
- pinch of salt
- Method:
- Sift the icing sugar, add the other ingredients and mix well until all the icing sugar has dissolved. Pour over your Bundt once it has cooled.
