Mini Spiced Apple Pies

For me apple pie signifies cold weather, comfort food, tradition, family and the list goes on.. I think there aren´t many people that dont like apple pie.. apple pie is also on most of the dessert menus of restaurants (definitely in South Africa) and "pastelerías" here in Spain..  You might think "why did she use a Minnie Mouse backdrop?" and the answer is because apple pie brings me back to my childhood along with Minnie and her very famous counterpart, Mickey!

Para mí el pastel de manzana significa frío, alimento confortable, tradición, familia y la lista sigue .. Creo que no hay mucha gente que no les gusta el pastel de manzana .. la tarta de manzana está también en la mayoría de los menús de postre de los restaurantes (sin duda en Sudáfrica) y Pastelerías aquí en España .. Usted podría pensar ¿por qué utiliza un fondo de Minnie Mouse? y la respuesta es que la tarta de manzana me traslada a mi infancia junto a Minnie y su famosa pareja, Mickey!

So when a friend invited us to a dessert Christmas party I thought it would be nice to make apple pie but in cute individual portions, easy to grab one off a plate and sure to be loved by most ;-)

Así que cuando una amiga nos invitó a una fiesta de postres de Navidad pensé que estaría bien hacer la tarta de manzana, pero en porciones individuales y lindas, fácil de coger individualmente y segura de gustarles a la mayoría;-)

There is less than 2 weeks left until Xmas and I dont even have my Xmas tree up yet.. the reason.. we cant find our box (BIG box) with Xmas decorations because of our recent move to another house.. Decorations that we accumulated throughout the years and some with sentimental value bought on travels or received as gifts.. I hope we find them (soon..).. :-(

Quedan 2 semanas para La Navidad y yo ni siquiera tengo puesto mi árbol de Navidad todavía .. la razón .. porque nosotros no podemos encontrar nuestra caja (caja MUY GRANDE) con nuestras decoraciones de Navidad después de nuestra reciente mudanza a otra casa .. decoraciones que hemos acumulado a lo largo de los años y algunas con valor sentimental que compramos en viajes o recibidos como regalo .. Espero que las encontremos (pronto..) ..

So let´s get to the  RECIPE
(makes 12 mini apple pies)

Ingredients for the Crust:
3 cups of All Purpose Flour (sifted)
280g Cold Butter, cut into cubes
Pinch of Salt

6 to 10 Tbsp of Ice Water

In a food processor add the flour and salt, now add the butter and pulse about 10 times or until the butter is about the size of peas and distributed evenly. Continue pulsing while adding 1 tbsp of ice water at a time until the dough comes together when pinched between your fingers. On a lightly floured surface quickly form into a disk, wrap it in cling wrap and pop it in the fridge for an hour before using. (The ingredients & method for the filling continues after the photo).

Ingredients for the Filling:
2 Apples, peeled, cored and finely diced
1/2 cup of Granulated Sugar
2 1/2 Tbsp of All Purpose Flour
Zest of ½ of an Orange
2 tsp of Lemon Juice
2 tsp of Ground Cinnamon

1 tsp of Ground Ginger
1/2 tsp of Ground Clove
Pinch of Salt

Preheat the oven to 190ºC , lightly grease a 12 hole muffin/cupcake tray with softened butter.

To make the filling, add the apples, sugar, lemon juice, salt, cinnamon, ginger and cloves, flour and orange zest in a bowl and stir together to mix everything well.

Line the bottom of each hole with a larger piece of dough (use a cookie cutter to cut out circles) and make sure you place it properly so each one comes up the sides. Add a little filling in each one, brush the tops of each one with egg wash and top it with the smaller circle of dough or you could do the basket weave effect which I made. Brush the tops with egg wash and sprinkle the top with a little raw sugar.

Bake them for about 25-30 minutes or until golden brown. Allow to cool completely before serving.
