Red Velvet Cinnamon Cupcakes

So it´s Monday morning and since I baked quite alot this weekend I wanted to share one of the things I made i.e. RED VELVET Cupcakes topped with Cinnamon Cream Cheese frosting..Yum!!  I love this combination!!  I´m all for experiments and this time it worked.. Red Velvet goes perfectly with the flavour of Cinnamon :-) and for some good news.. I found my Xmas decorations.. all 4 boxes of them!!

Así que es lunes por la mañana y ya que horneé bastante este fin de semana quiero compartir una de las cosas que hice, Cupcakes de terciopelo rojo, cubiertos con frosting de crema de queso con canela .. Wow! Me encanta esta combinación! Estoy a favor de los experimentos y esta vez funcionó .. El terciopelo rojo (red velvet) va perfectamente con el sabor de la 
Canela :-) y por alguna noticia buena.. encontré mis decoraciones de Navidad (4 cajas)..!!


A friend hosted her annual Xmas party and since her colour scheme was red with some accent colours, I offered to make her red velvet mini cupcakes.. unfortunately I didn´t have time to take photos of them before the event (all nearly 100) so decided to use the left over batter to make regular sized cupcakes and to" showcase" them on my blog..

Una amiga organizó su fiesta anual de Navidad y como su tema de color era el rojo con algunos colores de acento, me ofreció hacerle unos mini cupcakes de terciopelo rojo .. por desgracia no tuve tiempo para tomar fotos de ellos antes del evento (en total casi 100) por lo tanto decidí usar la masa sobrante y hice cupcakes de tamaño regular como "escaparate" en mi blog ..


To make these delicious cupcakes, and I mean DELICIOUS (just ask my quality department a.k.a. my family).. here´s the recipe:

Para hacer estos deliciosos cupcakes, y quiero decir DELICIOSOS (sólo hay que preguntar a mi departamento de calidad también conocido como mi familia).. aquí esta la receta:

RECIPE

for the BATTER (makes 15-18 cupcakes)


Ingredients:
2 & ½ cups of All Purpose Flour
1 & ½ cups of Sugar
1 tsp of Baking Soda 5g
Pinch of Salt
2 tablespoons of Cocoa Powder without sugar
¾ cup of Vegetable Oil
1 cup of Buttermilk
2 Large Eggs
1 tspn of Red Food Color (I used SugarFlair Extra Red )
1 tsp of White Vinegar
1 tsp of Vanilla Extract


Method:
Preheat your oven to 175ºC and line your cupcake tray liners.  You don´t need a stand mixer for this recipe as it´s super easy to do by hand using a whisk!
In a large bowl place the sifted All Purpose Flour, Sugar, Baking Soda, Salt and Cocoa Powder together and whisk until thoroughly combined.
In another bowl, add the red food color and the vinegar to the vegetable oil and then add the buttermilk.
Pour all of these liquid ingredients including the eggs and vanilla into the bowl with the dry ingredients and whisk the mixture to combine.
Do not over mix or this will develop gluten which will lead to a tough cake.
Divide the batter amongst your liners and bake immediately for 20 minutes or until a skewer comes out clean.



for the FROSTING


Ingredients:
300 g tub of full-cream cream cheese (leave in the fridge until the last moment)
250g of butter without salt
2 teaspoons of cinnamon
2 & ⅔ cups of icing sugar (sifted)
Pinch of salt


Method:

Cream icing sugar and butter together until light and fluffly, add the cinnamon and salt and mix well.  Now mix the cream cheese until just mixed to ensure it keeps its volume.  
Now you´re ready to pipe!
