Vanilla Cupcakes

These cupcakes were made super fast.. my daughter (might I add my teenager daughter) requested them on Saturday morning and needed them baked, cooled & frosted in record time because they (she and her other teenager friends..) decided (on the spur of the moment) to organize a surprize birthday party for one of their friends ;-)

Estas cupcakes se hicieron súper rápido .. mi hija (podría añadir a mi hija adolescente) los pidió el sábado por la mañana y los necesitaba horneado, fríos y con frosting en un tiempo récord, ya que decidieron (en un momento) organizar una fiesta de cumpleaños sorpresa para una de sus amigas, - )


If you like ALOT of vanilla you´ll like these cupcakes cause they sure have got alot of vanilla taste! I decided to use these cute little heart shaped liners because not only is Valentines Day around the corner but (there´s no but, they were all I had if I´m to be honest with you 
all...) :-)

Si te gusta un mucho la vainilla, te gustará estas cupcakes porque saben mucho a vainilla! Decidí usar estos pequeñas cápsulas con corazones no sólo porque Día de San Valentín está a la vuelta de la esquina, pero (no hay pero, era el que tenía a mano para ser honesta con todos ustedes...) :-)

INGREDIENTS:

METHOD:

for the cupcakes

Pre-heat your oven at 175ºC and line your cupcake tray.  Sift your flour, salt and baking powder and let stand on one side. Blend your oil and sugar well together and then add your eggs and when well mixed, add the vanilla essence.  Now add your dry ingredients and while mixing slowly in your blender add your buttermilk slowly. Don´t overmix your batter as this can cause gluten. Fill your liners 2/3 with your batter and bake for 20-22 minutes.  Leave in your tray for 5 minutes and remove to cool on a cooling rack.  

for the frosting

Mix your butter, icing sugar & salt until soft and creamy.  Add your vanilla essence and when well mixed add your cold cream cheese just until mixed (mixing for too long at this stage will cause the cream cream cheese to lose its volume).  Frost your cupcakes when cooled.


Of course I made some extras for hubby, me and Luca :-)  That´s why I can fully recommend this recipe to you, it´s packed with vanilla flavour and just what´s needed on a rainy day like today :-)

Por supuesto que hice algunos extras para mi marido, Luca y para mí :-) Es por eso que puedo recomendarles totalmente esta receta, está lleno de sabor a vainilla y justo lo que se necesita en un día lluvioso como hoy :-)

Espero que todos hayan tenido un gran fin de semana y consiguieran el descanso que necesitaba .. :-) He aquí una foto de mi "adolescente" Teagan a quien amo con todo mi corazón (simplemente miren esa cara) y porqué ha sido un placer hacer estas cupcakes sin previo aviso;-) Esta niña de ojos verdes robó mi corazón hace casi 16 años y la amaré siempre!
