Microwave Bread Pudding

In the last week I´ve seen quite a few propositions for the WHOLE KITCHEN proposal for February to make Bread & Butter Pudding.. Definitely one of my favourite puddings and quite a tradition in our household when growing up, probably due to the British influence in South Africa.. All I know is I love me some Bread Pudding and I love me some variations.. as you´ll see ;-)

La pasada semana he visto unas cuantas proposiciones bastantes para la propuesta de WHOLE KITCHEN para el mes de febrero para hacer Pudin de pan y mantequilla .. Sin duda, uno de mis postres favoritos y era una tradición en nuestra casa cuando crecía, probablemente debido a la influencia británica en el sur de África .. Todo lo que sé es que me encantan algunos Pudin de pan y me encanta algunas variantes .. como verás;-)


..but (there´s always a but, not the behind kind..lol) if you know me by now you know I love doing things differently! So I decided to make a microwave version, something I´ve never done before making bread & butter pudding and something I´ll definitely do again! Why? Cause it´s sooooooo easy and sooooooo delicious! The idea sparked from a blog post I saw recently on Brooklyn Farm Girl´s Blog: Quick french toast in a Mug

.. pero (siempre hay un pero, no el negativo .. jaja) si usted ya me conoce sabe que me encanta hacer las cosas de otra manera! Así que decidí hacer una versión con el microondas, algo que nunca había hecho antes de hacer pudin de pan y mantequilla y algo que definitivamente haré de nuevo! ¿Por qué? Porque es muuuuuuuuuuy fácil y muuuuuuuuuuy delicioso! La idea surgió de una entrada de blog que vi hace poco en el blog de Brooklyn Granja Girl: Quick french toast in a Mug


I made 3 variations because after making/testing the 1st one I got super excited and made 2 more variations.. The 1st one I made with stale white bread and chocolate chips (oh and a dash of cinnamon), the 2nd one I made was with yesterday´s french baguette smothered with butter and apricot jam (If I had raisins I would have definitely added it in this version).. here I also added some cinnamon (brings out those flavours!) and my 3rd version was based on a post I did a few weeks ago i.e. orange and cardomom naked layer cake.. hence the name that´s what I used but instead of real oranges, I used orange marmalade and added more sugar to make up for the bitterness ;-)


Hice 3 variaciones, porque después de hacer/probar la primera, me emocioné mucho e hice 2 variantes más .. Para el primero que hice usé pan blanco duro y trocitos de chocolate (Ah, y una pizca de canela), para el segundo que hice usé una baguette de ayer cubierta con mantequilla y mermelada de albaricoque (Si hubiese tenido pasas yo las habría añadido definitivamente en esta versión) .. aquí también agregué un poco de canela (saca a relucir esos sabores!) y mi tercera versión se basó en un post que hice hace unas semanas, es decir, una tarta de naranja y Cardomomo naked layer cake .. de ahí el nombre que usé pero en vez de naranjas reales, usé mermelada de naranja y añadí azúcar para compensar la amargura;-)




Unfortunately I didn´t take photos of the chocolate version.. Why you might ask.. because I ate it.. there I said it!! I didn´t want to eat anything sweet for at least 1 week and there I go and do it .. I need some WILL POWER!

Lamentablemente no tomé fotos de la versión de chocolate .. Se podría preguntar el porqué.. porque me la comí .. ¡lo dije! Yo no quería comer nada dulce durante al menos 1 semana y yo voy y lo hago .. Necesito un poco de FUERZA DE VOLUNTAD!

So to make this RECIPE/RECETA you would need the following:

METHOD:

Place your buttered bread and whatever else you want to put on it.. (I even think that Nutella would be a great option!) in a shallow dish (or mug) that can be used in the microwave. Whisk the large egg, sugar, vanilla essence and milk together and pour over the bread until the dish is full but not overflowing (there might be some leftovers, don´t worry just use it for the next one). Don´t forget to add your cardamom/cinnamon/raisins/chocolate chips.. (I added mine in between the layers too, to make sure the flavour was throughout the pudding ;-) Microwave on high for 1 minute and thereafter for 30 second intervals until the custard is set (mine took 3 minutes in total).  Leave to cool a bit before eating as they were piping hot! Let me tell you, once you eat this version you might not go back to making these in the oven as these individual portions mean no wastage and they are cute to serve to your family/guests.. TIP:  When you use sliced bread, try to toast it before because the microwave doesn´t make it crunchy as the oven would therefore you might not like the texture that much.. although when I used the french baguette, I didn´t have the same problem..
