Chocolate Mint Babyshower Cupcakes


It´s Monday the start of a new week../Es lunes, el comienzo de una nueva semana..
..and I have a million things to do and I hope to do them all well.. We all know the feeling of overwhelment.. Being a good wife, mother, building my business, being there for my family & friends, treating others with kindness.. I´ve learnt along the way to do everything I can to the best of my ability, 1 task at a time and to enjoy the journey along the way.. the truth is I´m not God so I´m not perfect.. but I strive to be the best I can be..

Today´s recipe is cupcakes I made over a week ago for a friend, Agata´s babyshower for her unborn baby boy who will be here in the next couple of weeks however I decided to post the recjpe for the Dark Chocolate Shirt Cake before.  These cupcakes are chocolate flavoured and the frosting was made with mint leaves to create a chocolate & mint flavoured cupcake! One of my favourite flavour combos!

La receta de hoy es para los cupcakes que hice hace más de una semana para una amiga, el babyshower de Agata y su bebé que estará entre nosotros en las próximas semanas, pero decidí publicar el post Dark Chocolate Shirt Cake antes. La masa de estos cupcakes es de chocolate y el frosting fue hecho con hojas de menta para crear un cupcake de chocolate y menta! Me encanta esta combinación!







CHOCOLATE MINT BABYSHOWER CUPCAKES

INGREDIENTS:


for the batter:


140g flour
60g cocoa powder
200g white sugar
1 cup sunflower oil
4 eggs
pinch of salt
1 teaspoon baking powder
1/4 full cream milk
1 & 1/2 teaspoon vanilla essence


for the frosting:


250g butter without salt at room temperature
2 heaped tablespoons of full cream cheese
350g of icing sugar
pinch of salt
a bunch of mint leaves
1/2 cup of milk
1/2 teaspoon vanilla essence



METHOD:


for the batter:


Pre-heat your oven to 175ºC and line your cupcake tray. I used these cute green and turquoise liners to match the babyshower theme :-) Sift all your dry ingredients together and leave to one side.  Mix your oil and sugar in your stand mixer until well blended, add your eggs 1 x 1 and your vanilla essence. Add your dry ingredients and mix until just incorporated, Lastly add your milk. Pour your batter into your liners until just over the halfway mark and bake them for 20-25 minutes. Leave to cool for 5 minutes in the tray before taking out, place on a cooling rack and cool completely before frosting.


for the frosting:


Heat up your milk until just boiling in a saucepan, add your whole mint leaves and allow to infuse and cool to one side.  In your stand mixer (or hand mixer) mix your butter & cream cheese until soft, add your sifted icing sugar and pinch of salt. Strain the milk from the mint leaves and add the cooled milk to your mixture, Lastly add your vanilla essence. Mix well on high for 5 minutes. Leave to cool in the piping bag in the fridge until ready to frost. I added some turquoise gel colourant to my piping bag to create this two tone coloured swirl.





I´ve come to appreciate natural ingredients and I try to use them as far as I can instead of artificial flavours, hence the reason for my experiment with the mint leaves. Result: some people could clearly taste the mint and others not.. solution: you could infuse your milk and mint mixture slightly longer or add more leaves, add melted mint chocolate to your frosting (this would however change the colour) or simply add a bit of artificial mint colour.. Baking is all about testing and seeing what works..

He llegado a apreciar los ingredientes naturales y tratar de utilizar en la medida de lo posible, en lugar de sabores artificiales, de ahí la razón de mi experimento con las hojas de menta. Resultado: algunas personas pudieron degustar claramente la menta y otras no .. la respuesta: usted podría infundir a su mezcla de leche y menta ligeramente más tiempo o añadir más hojas, agregar al chocolate derretido menta para tu frosting (sin embargo, esto podría cambiar el color) o, simplemente, añadir un poco de color menta artificial .. hornear es probar y probar y ver lo que funciona ..
