Funfetti low fat! Cake


..Since Spring is around the corner and I want to start getting into better shape for the summer (its been 3 years since my "baby" was born) I decided to reduce the fat content in this cake with APPLE SAUCE because this summer I don´t want to hide behind clothes because I´m ashamed of my body.. Not that I want to look like a supermodel because I aint one but to look the best I can and to enjoy the time with my family without feeling embarrassed about the way I look.. I´m sure all you women (and girls) out there can relate ;-)

Como la primavera está a la vuelta de la esquina y quiero comenzar a estar en mejor forma para el verano (han pasado 3 años desde que nació mi "bebé") he decidido reducir el contenido de grasas en esta tarta con compota de manzana, porque este verano no quiero esconderme detrás de la ropa por tener vergüenza de mi cuerpo.. No es que quiera parecerme a una supermodelo, porque no lo soy, pero voy a estar lo mejor que pueda y disfrutar del tiempo con mi familia sin sentir vergüenza sobre como esté .. estoy segura que todos ustedes, las mujeres (y jovencitas) por ahí saben de que hablo;-)

Nobody said that a low fat cake shouldn´t look good so hence the FUNFETTI or confetti or sprinkles whatever you want to call them that makes this cake look simply adorable :-)  I wish I had a birthday party to use it for..

Nadie dijo que una tarta baja en grasas no debe de tener buen aspecto y es por eso que tiene Funfetti o confeti o fideos de colores o como quieran llamarlos, que hace que esta tarta tenga un aspecto simplemente adorable :-) Me gustaría tener una fiesta de cumpleaños para utilizarla ..





I´ve used apple sauce in my cakes before, even replaced the fat i.e. butter/oil with it completely (recipe with 100% replacement "apple" sauce coming soon.. it sounds like I´m advertising a movie or something..lol) but never used it in my frosting as a replacement for fats.. thats what made this cake so challenging..

He usado compota de manzanas en mis tartas antes, incluso reemplazado la grasa de la mantequilla/aceite por completo (la receta con el 100% de sustitución de la compota de "manzana" muy pronto .. suena como que estoy anunciando una película o algo así .. jaja), pero nunca lo utilicé en mi frosting como un sustitutivo de las grasas .. eso es lo que hizo que esta tarta fuese un reto ..

Ingredients:


for the cake..

  • 200g flour
  • 200g white sugar
  • 1/2 cup apple sauce
  • 1/2 cup sunflower oil
  • 4 eggs
  • 2 teaspoon vanilla essence
  • pinch of salt
  • 1 teaspoon baking powder
  • 1 cup of funfetti (+ extra for decoration)
for the frosting..
  • 125g butter without salt at room temperature
  • 150g cream cheese
  • 1/2 cup apple sauce
  • 1 teaspoon vanilla essence
  • pinch of salt
  • 300g icing sugar (add more if your frosting is too runny, but keep in mind it will firm up in the fridge)
Method:

for the cake:

Pre-heat your oven at 175ºC and line your cake molds (I used 3 x 12cm mini molds).  Sift your flour, baking powder and salt together and leave to the side.  Cream your oil, apple sauce and sugar together, add your eggs 1 by 1 then your vanilla.  Now add your dry ingredients until well incorporated but becareful not to overmix.  Lastly add your funfetti. Mine baked for 28 minutes in total.  Let cool completely.

for the frosting:

Sift your icing sugar & salt together, leave to the side. Cream the butter and cream cheese together until light & flufy, add your apple sauce and vanilla and mix well. If it looks like it curdled, dont fret just continue to mix and it will come together.  Lastly on a low speed add your dry ingredients and mix until well incorporated.  Leave in the fridge to allow the frosting to firm up as it will be more runny than you used to. This frosting will not firm up as a normal frosting, unless you add copious amounts of icing sugar but who wants to add loads of sugar if you´re trying to reduce the fat content.. ;-)  Now it´s time to decorate, have fun with it!!
