Coconut Lime Cupcakes


If you haven´t used this combination yet in your baking I suggest you do, it´s heaven.. especially if you love coconut as much as I do........ :-)

This recipe has a twist and started with an idea.. I wanted to get not only both flavours of coconut and lime into the topping (frosting) but also into the batter.. So I made a basic cake batter and divided it into 2/3 for the coconut and the other 1/3 for the lime flavour.. this way you have both flavours in the batter but seperate but also together.. if that makes sense..... ;-)

Esta receta tiene un giro y comenzó gracias a una idea que tenía de conseguir no sólo los dos sabores de coco y limón en el relleno (frosting), sino también en la masa .. Así que hice una masa básica pero luego la dividí en 2/3 para el coco y el otro 1/3 de la lima .. de esa manera usted tiene dos sabores en la masa de una manera independiente, pero también juntos .. si eso tiene
sentido .....;-)





The little darling limes on top of the cupcakes were so easy to make.. I found some sweets that looked like lemons in our local Spar and decided to use my green gel colourant (mixed with a little lime juice) to paint them green.. not difficult at all but so cuteeeeeeeeeeeee :-)

Las pequeñas limas lindas de la parte superior de los cupackes fueron tan fácil de hacer .. He encontrado algunos dulces que se parecían a los limones en Spar y decidí usar mi colorante gel verde (mezclado con un poco de zumo de limón) para pintarlos de verde ..apenas nada, pero tan liiiiiiiiindas :-)



So here´s the recipe on how to make these.. it might seem complicated but trust me it´s not and the result is totally worthit!!

COCONUT LIME CUPCAKES

Ingredients:

Batter:
  • ½ cup vegetable oil
  • 200g sifted flour
  • 200g white sugar
  • 4 L eggs
  • 1 teaspoon baking powder
  • pinch of salt

Coconut batter:
  • ⅔ of the batter mixed with ½ cup shredded coconut

Lime batter:
  • ⅓ of the batter mixed with juice of ½ a lime & some green colorant (optional)

Lime Syrup (used in frosting and for brushing over cupcakes when hot):
  • ¼ cup sugar
  • ¼ cup water
  • juice of ½ a lime

Frosting:
  • 250g of butter without salt
  • pinch of salt
  • 300g of sifted icing sugar
  • ¼ cup of lime syrup
  • green colourant

Topping:
  • shredded coconut

Method:

Batter:
Mix oil and sugar together well, add eggs 1 x 1, add sifted dry ingredients. Divide into 2 bowls (⅓ for the lime batter and ⅔ for the coconut batter). Scoop ¼ cup of the coconut batter into the pre-lined cupcake tray and then 1 tablespoon of the limen batter and swirl with a toothpick. Bake the cupcakes in a pre-heated oven at 180ºC for 20-25 minutes. When the cupcakes are still hot brush each one of them twice with the lemon syrup.

Lemon syrup:
Heat the sugar and water on a stove top at medium to high heat until the sugar has dissolved, then add the lime juice. Take off the heat and leave to the side.

Frosting:
Mix the butter until creamy and slowly add the sifted icing sugar & salt until well mixed. Add the lime syrup and green gel colourant. When your cupcakes are cooled frost them with the frosting and lastly roll them into the coconut.. and you´re done!!
