RASPBERRY MUFFINS
Ingredients:
2 cups of frozen raspberries 1 cup of vegetable oil 200g of flour 250g of white sugar 1 teaspoon of baking powder 4 L eggs 1 teaspoon vanilla essence
Method:
Pre-line your tray with liners/or grease your pan with melted butter. Then pre-heat your oven to 175ºC. Sift your dry ingredients and leave to the side. Mix your sugar and oil, add the vanilla essence and then add your eggs 1 x 1. Lastly add your dry ingredients just until mixed (don´t overmix) and lastly your frozen raspberries. Fill your liners 2/3rd of the way. Bake for 30-35 minutes until golden brown and a tootpick comes out clean. Leave to cool on a wire rack and devour as soon as your mouth can stand the heat.. ;-)
