POPCORN BALLS

Ingredients: (makes aprox. 25-30 balls)
200g salted popped popcorn (I used microwave popcorn)
1 cup white sugar
1 cup corn syrup/glucose syrup
1/4 cup water at room temperature
3 tablespoons butter without salt at room temperature
1 teaspoon vanilla essence
Food Colouring (optional)
Directions:
Place already popped popcorn in a pre-heated oven of 200ºF/º00ºC to keep warm.
In a heavy sauce pan, combine the sugar, corn/glucose syrup and water. Cook over medium heat until the candy thermometer reads 235ºF/112ºF (soft ball stage).
Remove from the heat. Add the butter, vanilla and food colouring. Stir until the butter is melted. Immediately pour over the popcorn and stir until evenly coated.
When the mixture is cool enough to handle, shape into 5-7cm (2 - 3 inch) balls, dipping hands in cold water to prevent sticking.
