Eton Mess..

One of the things on my list to do, or should I say to bake.. has been to make ETON MESS.. so it got real messy around

Una de las cosas en mi lista de para hacer, o debería decir para hornear.. ha sido hacer ETON MESS..
but wanted to do something different with it.. so I thought why not make cute rose shaped meringues & fill them with it.. ofcourse adding some crumbled-up meringue pieces to the filling too.. just like the real deal :-)

pero quería hacer algo más con ello .. así que pensé ¿por qué no llenarlo con lindas rosas de merengue? .. por supuesto añadiendo algunas piezas de merengue para rellenar también .. igual que un buen trato :-)

Some HISTORY on this fascinating dessert.. Eton Mess is a traditional English dessert consisting of a mixture of strawberries, pieces of meringue, and cream, which is traditionally served at Eton College's annual cricket game against the pupils of Harrow School. The dish has been known by this name since the 19th century (source Wikipedia).

Un poco de HISTORIA sobre este postre fantástico.. El Eton Mess es un postre de origen inglés consistente en una mezcla de fresas, trozos de merengue y nata, que se sirve tradicionalmente1 en el partido anual de críquet que se celebra el 4 de junio en el Colegio Eton contra los estudiantes del Winchester College.2 El plato ha sido conocido por este nombre desde el siglo XIX (fuente Wikipedia).

Since it´s Cherry Season I decided to make my Eton Mess with cherries.. Most of the recipes I could find on the web were made with strawberries..

Ya que es temporada de cerezas decidí hacer mi Eton Mess con cerezas .. La mayoría de las recetas que he podido encontrar en la web se hicieron con fresas ..

  • Pre-made ROSE SHAPED Meringues (recipe A below)
  • Chopped & pitted black cherries
  • Whipped cream (recipe B below)


After you have whipped your cream to soft peaks, fold your crushed meringue and chopped cherries into it.

How to serve?

Option A:
Fill your cups/glasses/jars or whatever you want to serve your Eton Mess in.. Top it with more crushed Meringues!

Option B:
Stack 3 rose meringues (make sure they are hard and dry) on top of each other after filling the 1st and 2nd one with the Eton Mess filling. These are perfect as desserts or to serve with your afternoon tea/coffee :-)



  • 1 packet of raspberry/strawberry/cherry jelly/jell-o
  • ¼ cup of white granulated sugar
  • 3 L egg whites (room temperature)
  • pinch of salt
  • pinch of cream of tartar
  • ¼ teaspoon of vanilla essence


  • Pre-heat your oven to 90ºC. Pre-line your baking tray with wax paper. Mix your jelly and white sugar together. Whip your egg whites on medium speed until it starts to foam, then add your salt and cream of tartar, increase the speed of your beater to medium high and slowly add your sugar & jelly mix. Continue to beat on high until the mixture is thick & glossy. This takes about 5 minutes.
  • Fill a piping bag tipped with the Wilton 1M nozzle (open star) and pipe your roses on your wax sheet 3 to 4 cm apart in a clockwise motion starting in the centre, moving outwards, releasing pressure at the end of the rose.  Bake for 2-3 hours (this depends on humidity) until hard to the touch. Leave in the switched-off oven overnight.


  • 200ml chilled cream (suitable for whipping)
  • 2 tablespoons granutaled white sugar
  • ¼ teaspoon vanilla essence


  • Ensure your bowl is clean and grease free. Whip your chilled cream on medium speed until it starts to bubble, at this stage increase your speed, beat a little more just before the soft peaks stage and slowly add the sugar. For Eton Mess you want your cream to be Soft Peak consistency.

Please do yourselves a favour and make this dessert,, it´s super easy, does not require many ingredients and the result is delicious. It got the seal of approval from all my family members :-)
