Funfetti Cake Batter Ice Cream Sandwiches

When I discovered this recipe I was so excited, this recipe is so easy and reminds me of the best ice creams I have tasted. The ones you simply can´t get enough.. sweet and creamy..

Cuando descubrí esta receta yo estaba tan emocionada, esta receta es tan fácil y me recuerda a los mejores helados que he probado. Esos que simplemente no pueden parar de comer .. dulce y cremoso ..

Funfetti Cake Batter

  • 400ml cold whipping cream
  • 1 tin (370g) cold condensed milk
  • ¾ cup sifted white flour
  • ¼ cup white sugar
  • ½ teaspoon baking powder
  • pinch of salt
  • 2 tablespoons melted butter without salt
  • 1 teaspoon vanilla essence
  • ½ cup funfetti
  • plain wafer biscuits


Whip the cream until stiff peaks form, fold the cold condensed milk into the cream. Now fold in the rest of the ingredients. Pour into a container suitable for freezing (I used my bread baking tin) top with some more funfetti. Freeze for minimum 6 hours.  You don´t need to whisk the mixture during the freezing process because of using the condensed milk as it prevents cristilization. When the ice cream has frozen, cut squares with a sharp & long knife dipped into a jug of hot water before every cut. Place inbetween 2 wafer cookies and ENJOY! Be warned these are very very tasty!

These ice cream sandwiches are so easy to make and hardly takes any prepping time at all.. and if you like cookie dough ice cream you will like this flavour of CAKE BATTER as well!
